Soda Cracker Pie

For the meringue shell:
3 egg whites
1 cup sugar
⅓ cup crushed saltines (about 12 crackers)
½ tsp. baking powder
½ cup pecans, chopped fine
1 tsp. vanilla

For filling:
8 oz. cream
3 T. powdered sugar
3 T. chocolate milk powder

I. Butter 9-inch glass pie plate. Preheat oven to 350°.

II. Beat egg whites until really stiff. Add sugar slowly to make a stiff meringue.

III. Stir in baking powder, pecans and vanilla. Spread the mixture in the prepared pan. Bake at 350° for 30 minutes.

IV. Allow meringue shell to cool thoroughly.

V. Whip cream until it forms peaks. Add powdered sugar and chocolate powder.

VI. Spread whipped cream mixture over shell. Refrigerate.

Servings: 8 slices.

Voice of Experience:
The lady who shared this recipe said that Hershey's chocolate milk powder is better than Nestlé Quik. I tried the store brand the last time I made the pie because I couldn't find any Hershey's. Quik would surely be better than that was. If I knew five people who wanted to go in on it, I would buy the Hershey's.
