Meatloaf with a bite

It's what's for supper!

1 lb. ground beef
1½ c. medium salsa
¼ c. Parmesan cheese
¼ c. shredded Monterey Jack cheese
1 egg
1 c. cracker crumbs

Mix together and smash it into a greased loaf pan. Bake at 350° for about an hour.

Voice of experience: I like to make 8 mini loaves instead of a single ordinary one. The meatloaf cooks faster and there is no slicing necessary.

I'm flexible on the grated cheese, using what I have on hand. Extra-sharp Cheddar tonight, looks like. I think I'll slip in some of that Mrs. Renfro's habanero salsa along with the tame Pace's. I see AllRecipes recommends Merlot with this dish. Great! We have a box on tap.
