German pancake with buttermilk syrup


I. Preheat oven to 400 degrees. Put 2 T. butter in 9x13 pan, place pan in oven for a few minutes to melt the butter.

II. Place the following in a blender, cover and process until smooth:
6 eggs
1 cup milk
1 cup flour
½ tsp. salt

III. Tip baking pan to coat the bottom of the pan with the melted butter. Pour the batter into the pan and bake the pancake for 20 minutes.

While pancake bakes, prepare syrup.

IV. Combine in a saucepan:
1½ cups sugar
¾ cup buttermilk
½ cup butter
2 T. corn syrup
1 tsp. baking soda

V. Bring syrup to a boil and boil for 7 minutes. Watch it and stir the mixture occasionally because the syrup foams up. It calms down when you remove it from the heat.

VI. Remove from heat and stir in:
2 tsp. vanilla

Voice of experience:
I use Saco powdered buttermilk (follow can directions for the right proportion of powder to water). I also cut the syrup recipe in half.
